Five ways to identify true and false Sauce fragrant wine!
A bottle of traditional sauce-flavored Baijiu takes at least three to five years from the raw material entering the factory to the product leaving the factory. So what is authentic Sauce fragrant wine?
The "Sauce-Flavored Baijiu National Standard" stipulates that the so-called "Sauce-Flavored Baijiu" is made of sorghum, wheat, water, etc. as raw materials, fermented, distilled, aged, and blended by traditional solid-state methods, without adding edible alcohol and non-Baijiu fermentation. The aroma-flavored substance produced by Baijiu has a sauce-flavored Baijiu.
The regulation is clear: "Sauce-flavored Baijiu shall not be added with edible alcohol and non-Baijiu-fermented substances that present aroma, flavor and color. It must be made from sorghum, wheat and water through traditional solid-state fermentation to ensure the quality of soy sauce-flavored Baijiu." This provides quality requirements at the national standard level for the "solid-state fermentation of pure grain" of soy sauce-flavored Baijiu.
So how to identify real and fake Sauce fragrant wine?
(1) Some counterfeiters will mix yellow in the wine, which can be identified by adding artificial colors. After sun exposure, the color of the wine mixed with yellow pigment will fade, and it cannot be restored to its original state after being placed indoors.
(2) From the perspective of color and appearance, the wine body of soy sauce-flavored Baijiu should be yellowish or colorless and transparent, clear and translucent, without suspended solids, and without precipitation. When poured into a transparent glass wine glass, the larger and more wine beads are produced and the slower they disappear, the better the quality of the wine. The slow disappearance of wine beads indicates that the wine has a high concentration and a long storage time. When drinking, it tastes mellow and the sauce is rich. This is because ethanol and water in the wine react to form esters. The longer the wine is stored, the more fragrant the wine will be. Shake it lightly, and it is better for the wine tears to hang for a long time.
(3) Finally, taste. Drink a small mouthful into your mouth to experience whether the wine is plump, the taste is coordinated, and the aftertaste is mellow and long, then swallow it slowly, and then shut up and let the wine taste slowly come out of your nose through the nasal cavity. You will feel a very rich and mellow taste of good wine. In addition, Sauce fragrant wine pays attention to the fragrance of an empty cup, that is, after drinking the wine in the cup, the empty cup is left for a long time and there is still fragrance.
(4) Smelling is also one of the ways to distinguish between real and fake Sauce fragrant wine. Take a drop of wine and put it in the palm of your hand, and then rub the palms of your hands a little bit. The smell of the wine after heating is fragrant, which is a high-quality wine; if the smell is sweet, it is a medium wine; if the smell is bitter, it must be a bad wine.
(5) In addition, a physical test can also be done. Take a drop of edible oil and put it in wine. If it is found that the oil spreads irregularly in the wine and the sinking speed changes significantly, it is an inferior wine; if it is found that the oil is suspended in the wine to form a round drop and the diffusion is very slow, it is undoubtedly a high-quality wine.
