01 Cup hanging
We pour the wine into a glass and swirl it around to see if there is any hang-up. Generally speaking, a good-quality Maotai-flavored wine will have a fast hang-up and a slow slide down. The better the hang-up, the older the wine.
The main reason for this difference is that aged liquor contains a large amount of aromatic ester polymers, which have strong intermolecular forces and strong overall surface tension. The less aged, soy-flavored liquor contains fewer large-molecule polymers, which have weaker intermolecular forces on the surface of the liquor and weaker overall surface tension.
02 Observe the color
Then there is the color observation. Generally, the new wine and mixed wine are milky white and transparent, while the aged Baijiu is slightly yellow, and the older the Maotai flavor liquor is, the thicker the yellow is, and the transparent is free of suspended solids.
03 Smell
Next is smelling the aroma. Shake the glass filled with wine in front of your nose and gently sniff it. You will smell the elegant aroma of good wine, but it is not advisable to inhale too vigorously, otherwise the olfactory nerves in your nose will become blunted.
New wine and miscellaneous wine are pungent and have peculiar smell, while aged wine smells mild, has fragrant aroma, and is elegant and delicate.
04 Taste
Finally, it is time to taste the flavor.This is the most important step in the tasting of Maotai-flavored liquor. If the liquor does not burn the throat and does not make you feel drunk when you drink it, it is a good aged liquor. New liquor and miscellaneous liquor burn the tip of the tongue, and then the liquor will spread all over the mouth after tasting.Aged liquor enters the mouth in a "mass" and goes down the throat in a straight line, also known as a "straight throat". The liquor does not have a wine-like smell that spreads throughout the body. The longer the liquor is aged, the less it will spread.
The reaction of the stomach is a burning sensation, which means that the new wine is the old wine, and there is no irritation. Instead, the stomach slowly feels hot and gradually spreads to the whole body, which gives a warm feeling.
